Blue Mountain Penstamon

Love the electric blue of this wildflower that is decorating the high mountain meadows around Deer Valley right now. She will also flourish in the drier spots of your garden.

Most hybrids are Zones 4 - 9. Does best in low nutrient alkaline soil.

High Altitude Cooking: Recipe Adjustments (over 6,500 feet)

Baking Powder: Reduce each teaspoon by 1/4-1/2.
Baking Soda: Decrease as baking powder. No adjustments needed with acidic (fruit juice, ex.) ingredients.
Sugar: Decrease each cup by 2-3 tablespoons.
Oven Temp: Increase 25 degrees F, decrease by 25 F. for glass dish.
Fats: No adjustment unless substituting, then 1 cup shortening = 3/4 cup butter or oil.
Cookies: No adjustments needed.
Rice, Veggies, Soups: Increase 25% per cup water, cook longer (Boiling point is lower at high altitude and water evaporates faster.)
